Bring water to boil. Add 1 ½ C water to couscous in a heatproof bowl and cover. Let stand 10-15 minutes. Chop apricots, green onion, mint and cilantro and add to separate mixing bowl. Add lemon juice, garlic and lemon zest and mix well. Fluff couscous with a fork when all water has been absorbed. Add to mixing bowl and mix well.
