Workers lean over conveyor belts, gloved fingers a blur as they handle a stream of raw chicken: whole breasts, split breasts, pounded and shaped, tenders, cubes, nuggets. Chicken parts destined for Cordon Bleu and Kiev flow ceaselessly
amid the noise of a thousand mechanical parts moving one against the other. Employees wear earplugs, but there’s not much they can do about the smell or the seeping cold.
Look again—the workers are Asian, African-American, Caucasian,
Latino.
