Warm Green Bean and Tomato Salad
- 1 pound fresh green beans, ends removed
- 1 tablespoon olive oil
- 1 cup grape tomatoes
- 1/3 cup shaved parmesan or asiago cheese
- Salt and pepper, to taste
- Saute green beans until nearly tender - about 9 minutes.
- Add tomatoes and saute until skins just begin to blister, about 3 minutes.
- Add salt and pepper
- Transfer to serving dish and top with cheese.
- Serve immediately.
