Carrot Kale Slaw

Ingredients

  • 1 cup shredded kale
  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/4 cup dried cranberries
  • 2 medium carrots, julienned
  • 2 tablespoons finely diced red onion
  • 2 tablespoons mayo
  • 1 teaspoon sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

Cooking Instructions

  1. In a small bowl, whisk mayo, mustard, sugar and apple-cider vinegar. Season with salt and pepper.
  2. In another bowl, combine kale, cabbage, carrot, and red onion with dried cranberries.
  3. Season with salt and pepper, drizzle with dressing, and toss to coat. Chill until ready to serve.
