Corn and Quinoa Salad


  • 1/2 cup uncooked quinoa, well rinsed
  • 1/3 cup diced red onion
  • 2 tablespoons lime juice
  • 1 cup canned black beans
  • 1 cup frozen corn, defrosted
  • 1/2 cup green peppers, chopped
  • 3 medium tomatoes, chopped
  • 4 ounces fresh Mozzarella or Queso Fresco, cubed
  • 1/4 cup cilantro, chopped
  • 3 tablespoons olive oil

Cooking Instructions

  1. Cook quinoa according to directions. Empty in bowl, fluff and allow it to cool.
  2. Slice red onion into slices and soak in cold water for 5 minutes, drain and dice.
  3. Rinse and drain black beans and mix with lime juice, diced onions, chopped tomatoes, corn, cilantro, cheese and oil.
  4. Toss with cooled quinoa and salt to taste. Chill or serve immediately at room temperature.
