Grilled Peach and Fresh Mozzarella Salad

Ingredients

  • 2 firm, ripe peaches (about 1 pound), quartered
  • 10 ounces baby arugula
  • 1 cup fresh mozzarella, cut into small pieces
  • 1/4 cup torn fresh mint leaves
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or agave)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Sprinkle with fresh pistachios (optional)

Cooking Instructions

  1. Grill peaches cut side down on preheated, oiled grill at 450 - 550 degrees F. Grill until well-charred, moving frequently - about 4 minutes.
  2. Toss together arugula, mozzarella, mint, and pistachios (if desired) in a large bowl.
  3. Whisk together olive oil, vinegar, lemon juice, mustard, honey or agave, salt, and pepper in a medium bowl until well combined. Drizzle vinaigrette over arugula; toss to combine. Serve grilled peaches over salad.
