Roasted Vegetables

Check out your local farmer's market for fresh vegetables to pair with your favorite Barber Foods recipe! This recipe can be customized to include your favorite veggies - we recommend using butternut squash, zucchini, broccoli, red peppers, carrots, acorn squash, cherry tomatoes, mushrooms, and fingerling potatoes.


  • 4 cups your favorite season vegetables, peeled and cut into 1'' pieces
  • 1/3 cup olive oil
  • 2 teaspoons salt
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon chopped rosemary

Cooking Instructions

  1. In a large bowl, whisk together salt, spices and olive oil.
  2. Add vegetables and toss to coat.
  3. Transfer to 13x9'' ovenproof pan and roast at 375°F for 20-25 minutes, or until fork tender.
