Warm Green Bean and Tomato Salad

Ingredients

  • 1 pound fresh green beans, ends removed
  • 1 tablespoon olive oil
  • 1 cup grape tomatoes
  • 1/3 cup shaved parmesan or asiago cheese
  • Salt and pepper, to taste

Cooking Instructions

  1. Saute green beans until nearly tender - about 9 minutes.
  2. Add tomatoes and saute until skins just begin to blister, about 3 minutes.
  3. Add salt and pepper
  4. Transfer to serving dish and top with cheese.
  5. Serve immediately.
